Their philosophy in everything they do is to make the most of top quality ingredients. Intensive, hands-on care in the vineyard, with minimal use of chemicals, produces the best possible fruit for their wines. Wild yeast ferments and minimal intervention winemaking, with a nod to traditional Burgundian techniques, allow their wines to express their site specificity, or terroir. Similarly, in the restaurant they aim to source ingredients that are seasonal, local and organic.
At Moorooduc Estate, they specialise in high quality, hand crafted Chardonnay and Pinot Noir. They are fascinated by site-specific characteristics of the grapes and resultant wine - or as the French say, terroir - and aim to showcase these, by using simple, natural winemaking including wild yeast fermentation and natural malolactic fermentation to shape unique, food-friendly wines with complexity and texture. All their wines are bottled under screwcap.
