The Chardonnay wine is barrel fermented in one and two-year old Barriques and aged for three months on it's lees which are regularly stirred.
The Shiraz grapes are picked and traditionally fermented in small vats prior to aging. The Shiraz wine is aged for 15-18 months in barrel, depending on the quality and characteristics of the vintage.
