Sweetened Condensed Milk

Sweetened condensed milk is made by condensing sweetened fresh milk to half its original volume, by removing moisture in a vacuum evaporator. The high sugar content destroys most microorganisms, so heat-sterilization is not necessary. Condensed milk can be stored up to two years at 0-15C. Sweetened condensed milk is used to make toffee, fudge, sauces and cake icings.
